It is a name that has spurned my heart with love and joy for the past year.

But this week, I am seeing footage of the devastation from Hurricane Harvey in Texas, and my heart is shattering. To see so much pain, wreckage, and even death surrounding my home state and my son’s name, I am deeply saddened.

You’re only a year old, and the only girl you have on your mind is your Mama. (And she’s ok to keep it that way.) Last night, your dad and I were reminiscing about our 12-year dating anniversary. Twelve years is a long time, and we’re stronger than ever. I hope you can have a happy relationship like this one day.

Now, while your Dad sets a great example in pretty much every area of life, I ask that you don’t date a girl like he did me. And if they let you, don’t marry them, because they have zero common sense and are likely not thinking straight because of your striking good looks.

Through many years of work as a nutrition professional, I’ve learned that not everyone is quick to adopt all of the recommendations for healthy eating. I’ve also learned that that’s fine, because we’re all allowed to have our own personal taste preferences. Our own history with eating, the way we were raised, and our cultural norms influence our palate, and that can still be honored. I work to find ways to meet people in the middle instead of trying to force changes that neither work nor are fun! Eating shouldn’t have to be a chore but rather an experiment.

This will help transition toward healthier eating, keeping some of the flavor of your favorite foods while also doubling the nutrition factor. So many good things come on Friday: More time with loved ones, special events like concerts and parties, fun memories, two days off, most people are relaxing and having fun…and it just has good vibes. ๐Ÿ’ƒ๐Ÿผ Since a young age, we’ve been conditioned to work hard Monday-Friday, then we can kick our heels up and party. ๐ŸŽ‰ But what about for those who work weekends? What if they’re off on Monday? Their Monday is likely less “a case of the Mondays” and more like #Monyay. What if someone likes their job, or perhaps it’s their only time to have community with others? Don’t they live with a spirit of #Monyay? My son walked for the first time last week on #Tuesyay, #Wednesyay we danced, and #Thursyay I rocked him to sleep. #Saturyay we slept in and had this most decadent (and healthy!) carrot cake, and #Sunyay we had a fun day at the splash pad.

I Missed My Son’s First Steps. It Hurts, but I’ll be OK

I missed my son’s first steps. Its the sacrifice of a working mother, providing for your family and fulfilling your personal calling, all while knowing that you might not get to witness every “first” of your baby.

And first steps – that’s a big one. At least everyone has been making it feel that way.

It’s the question we’re constantly answering: “Is he walking yet?”. We’ve been cautious to not rush the milestones, knowing he would grow quickly and that he would eventually achieve them all. The only thing we rush is trying to pay attention, watching his developments and learning unfold, not being distracted or taking him for granted. Despite all this, we missed his first steps.

Recipe Roundup: Spinach Casserole – Lean and Green [Recipe]

We’re on day three of enjoying this cheesy spinach casserole that I adapted from my beast of a cookbook, Passionate Vegetarian. It’s been great paired with pork loin that I cooked in the slow cooker with a marinade of soy sauce, Worcestershire sauce, honey, mustard, onion flakes, and garlic powder.

The texture of this casserole is so pleasant. I subbed an all-purpose gluten-free flour for what’s necessary in our household, and it cooked up just wonderfully! Just look at those layers of cheesy spinach. Yum.
